The 14 allergens, one by one

1. Cereals containing gluten. Wheat (including spelt and khorasan), rye, barley and oats, and their hybridised strains. Found in bread, pasta, batter, breadcrumbs, sauces thickened with flour, beer and many processed foods.

2. Crustaceans. Prawns, shrimp, crab, lobster, crayfish and langoustine. Often present in seafood sauces, Asian pastes and stocks.

3. Eggs. Whole egg, egg white and yolk, in mayonnaise, cakes, pasta, glazes, meringue and some coated foods.

4. Fish. All fish species, plus fish sauce, Worcestershire sauce, some Caesar dressings and stock cubes.

5. Peanuts. Also called groundnuts. In peanut butter, satay sauces, some confectionery, cereals and refined peanut oil products.

6. Soybeans. Soy sauce, tofu, edamame, textured vegetable protein, many vegetarian products and lecithin.

7. Milk. Including lactose. Butter, cheese, cream, yogurt, whey, casein, and hidden in bread, batter, chocolate and processed meats.

8. Nuts. Almonds, hazelnuts, walnuts, cashews, pecans, Brazil nuts, pistachios and macadamia nuts. In pesto, marzipan, praline, nut oils, breakfast cereals and desserts.

9. Celery. Stalks, leaves, seeds and celeriac. Common in stocks, soups, salads and spice mixes.

10. Mustard. Seeds, powder, leaves and prepared mustard, in dressings, marinades, sausages and curries.

11. Sesame seeds. On bread and bagels, in tahini, hummus, halva and many oils.

12. Sulphur dioxide and sulphites. Declared when above 10 mg per kg or per litre. Used in dried fruit, wine, cider, some meat products and processed potatoes.

13. Lupin. Lupin flour and seeds, found in some breads, pastries and pasta, especially gluten free ranges.

14. Molluscs. Mussels, oysters, squid, octopus, snails and scallops, plus oyster sauce and some seafood stocks.

How the 14 must be declared

On prepacked food, each allergen must appear in the ingredients list and be emphasised, usually in bold, so it stands out from the other ingredients. Where there is no ingredients list, the label must carry a "contains" statement.

For food sold loose in Ireland, such as restaurant meals, takeaway food, deli counters, bakeries and canteens, S.I. No. 489 of 2014 requires the allergen information to be available in writing at the point where the food is offered for sale. A menu with allergen numbers, an allergen matrix or a folder at the counter all work, as long as it is accurate and kept up to date.

Gluten, milk, eggs

The three most common allergens in everyday recipes, and the ones most often missed in sauces and coatings.

Nuts and peanuts

Counted separately in law. Peanuts are legumes; nuts are tree nuts. Both cause severe reactions.

Sulphites above 10 mg

The one allergen with a threshold: declare it when the level passes 10 mg per kg or litre.
